EASY PINEAPPLE UPSIDE-DOWN CAKE
1 stick butter
2 1/2 c. brown sugar
1 can pineapple slices
Maraschino cherries
1 yellow cake mix

Melt butter in oblong cake pan. Rotate pan spreading melted butter evenly and coating sides of pan. Sprinkle brown sugar in pan and pat down. Arrange pineapple slices on brown sugar. Place cherry in center of each pineapple ring. Mix yellow cake mix as directed, using reserved pineapple juice for water. Pour cake batter over pineapple rings. Bake as directed on cake mix, adding 5 minutes. Test for doneness by inserting toothpick in center of cake. Cool slightly then invert cake onto plate.

 

EASY BLACK FOREST CAKE

1- package of your favorite chocolate cake mix...or home made recipe.
21-oz. can cherry pie filling 
2 tsp. rum
1 tsp. pure bourbon vanilla extract
2 eggs, lightly beaten
Glaze topping:

1/2 C. sugar
3 Tblsp. butter
3 Tblsp. light cream
3-oz. semi-sweet chocolate chips
1/2 tsp. pure bourbon vanilla extract 

Preheat oven to 350º F. Spray a 10 or 12 inch tube pan with cooking spray and lightly flour.

Combine cake mix, pie filling, vanilla, rum, and eggs. Stir until well mixed. Pour into prepared pan and bake 30 - 40 minutes. Remove to rack and cool 15 minutes before turning cake out of baking pan. Immediately pour glaze topping over cake. (See Below)

Glaze Topping:
Combine sugar, butter and milk in microwave-safe bowl. Bring to boil, stir. Microwave on medium for 2 minutes. Add chocolate chips, stir until thoroughly blended and glaze is smooth. Chips must be completely melted. If necessary, return to microwave for 10 second intervals. Add vanilla.

EASY PEACH COBBLER

1/4 c. butter
4 c. peeled and sliced peaches                                                                                                                                           
1/2 c. sugar
2/3 c + 1 Tblsp cornstarch                                                                                                                                         1/2 tsp. ground cinnamon
2 tbsp. brown sugar, firmly packed
2 tbsp. milk

In 1-quart shallow casserole, combine peaches, sugar, 1 tablespoon cornstarch and cinnamon. In medium bowl, mix remaining 2/3 cup cornstarch with brown sugar. Cut in butter until mixture is size of small peas. Stir in milk until moistened. Drop by spoonfuls onto peaches. Bake at 375 degrees for 30 minutes or until toothpick inserted into crust comes out clean and is golden brown. Let stand 5 minutes.

 

Shortbread Cookies
 
2 cups butter, softened
1 cup white sugar
2 teaspoons vanilla extract
4 cups all-purpose flour
 
Preheat oven to 350 degrees.
Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.
Put through cookie press and form cookies onto baking sheets. Bake for 10 - 12 minutes

 

EASY POCKET PIES

Ingredients:

refrigerated dough (flaky biscuit)                                                                                                        thinly sliced Granny Smith apples                                                                                                          1/2 stick melted butter                                                                                                                           cinnamon, to taste                                                                                                                                 sugar, to taste

Roll out dough into flat circles. Set aside. Mix remaining ingredients, minus 1/2 of the butter. Place a small amount of apple mixture in the center of each round. Fold in half. Press the edges closed. Brush each with remaining melted butter. Sprinkle with cinnamon and sugar. Bake in a preheated 350 degree oven for 15-20 min. or until golden brown.

Variations: This dessert can be made in countless ways. Here are a few ideas...but, don't be afraid to experiment.

Use canned cherries. Omit all other ingredients.

Use a mixture of softened cream cheese and crushed fruit of your choice.

This idea is not only for dessert. You can make a meal out of it.

Try a mixture of cooked ground beef, cheddar cheese, onion and/or garlic.

Or... a mixture of ground beef, tomato sauce, mozzarella cheese, and Italian seasonings. After cooking top with more sauce and parm. cheese.

Use your imagination!!

 

SMOOTHIES

A combination of two or more of the following fruits; bananas, strawberries, blueberries, rasberries, citrus fruit, any fruit that you like. Frozen works great. If you use frozen fruit - omit the ice.     

Place the fruit in a blender with ice, milk or coconut cream, 2 Tblsp. wheat germ, and any extras you may or may not want to add. Blend until smooth. Garnish with fresh fruit. Serve.

This is a healthy and delicious dessert, and it is simple to make. Enjoy!    

 

JELLO

Use any flavor you like. Add any cubed fruit you like just before it sets. Garnish with fresh fruit. Whala, a simple and attractive dessert.

 

DESSERT

Ingredients:

2 cups milk                                                                                                                                               2 pkgs. vanilla or chocolate pudding                                                                                                       8 oz whipped topping                                                                                                                             1 pkg. pound cake, cut into cubes                                                                                                           2 c. halved strawberries or whole raspberries

Whisk milk and pudding in a large bowl for about one minute. Stir in whipped topping. Spread 1/3 of pudding mixture into the bottom of a medium dessert bowl. Top with pund cake. Add the rest of the pudding mix. Refrigerate 2-4 hours, or until set. Just before serving, top with fruit.
