3/4 cup yellow cornmeal 1/4 cup all-purpose flour 2 teaspoons salt 1 teaspoon ground red pepper 1/4 teaspoon garlic powder 4 catfish fillets 1/4 teaspoon salt Vegetable oil
Combine first 5 ingredients in a large shallow dish. Sprinkle catfish fillets with salt, and dredge in cornmeal mixture, coating evenly. Pour vegetable oil to a depth of 3 inches into a Dutch oven; heat to 350°. Fry fillets 5 to 6 minutes or until golden; drain on paper
towels.
