I don't know about you...but...this year seems to be flying by...We are already in May! My girls are growing up too fast. I'm getting old way too fast...

May is Teacher Appreciation Month (thank a teacher this month), Better Sleep Month (catch some zzzzz's), and Physical Fitness & Sports Month (take a walk). May is also a month with some great food holidays...It is Hamburger Month, Egg Month, Barbecue Month, Salad Month, and the fourth week is Pickle Week.

I have begun working on a new feature at The Recipe Finder. We are now going to have our own recipe search. I'm not done yet...But, it should be "completed" by mid May. I have already put in several recipes. Easy Cheesy Enchiladas
Ingredients:
1 package Cream Cheese, softened 2 cups Shredded Cheddar Cheese 1/4 cup sliced green onions 8 (6 inch) flour tortilla 1 - 16 ounce jar your favorite salsa Optional Toppings: sour cream, sliced black olives, and green onions
Directions: Beat cream cheese with electric mixer on medium speed until smooth. Add 1 1/2 cups of the cheddar cheese and onions; mix until blended. Spread some cheese mixture down center of each tortilla; roll up. Place, seam-side down, in 10x13 inch baking dish. Pour salsa over tortillas. Sprinkle with remaining cheddar cheese; cover. Bake at 350 degrees for 25 minutes or until thoroughly heated. OPTIONAL- Top with sour cream, sliced black olives, and green onions.
MEXICAN COFFEE BEVERAGE
Ingredients:
1 qt whole milk 1 tsp. cinnamon 1 1/2 tsp. pure bouban vanilla 2/3 cup instant cocoa mix 8 cups boiling water 1/3 cup instant coffee 1 oz kahlua (shot) Whipped Cream (to taste)
Combine first three ingredients in a Dutch oven, and cook over medium heat until thoroughly heated. Do not allow to boil. Stir in instant cocoa mix. Combine boiling water and coffee granules, and stir into milk mixture. Add Kahlua. Serve with a dollop of whipped cream and, if desired, garnish with cinnamon sticks. Makes 3 quarts
