Melt the following in a large cast iron frying pan:
1/2 c. butter 1 c. brown sugar
Layer the following on top of melted butter:
Pecan halves
1 - can pineapple rings or chunks
Beat the following ingredients until thick:
2 eggs 1 c. sugar 1 tsp. pure vanilla 1 c. sifted flour 1 tsp. baking powder Pinch of salt
Add:
1/2 c. scalded milk 1 tbsp. butter
Then...mix egg mixture thoroughly and pour over butter, pineapples, and pecans. Place over low heat and bake until done, about 35 minutes. During the last 5 minutes tilt cover to aid in drying top of cake. Turn upside down on large plate. Serve plain or with
whipped cream.
